Organic - DOP Valli Trapanesi

Dedicated to Carlo Barbera, fifth generation of the family and future master oil maker. This extra virgin olive oil, produced in the company's experimental mill, is appreciated by the best internationally renowned chefs. The Cerasuola variety olives, grown according to the organic farming method, boast the Protected Designation of Origin "Valli Trapanesi". To make this oil, the olives are carefully pitted without damaging the pulp. The result is an oil with a delicate aroma and a sweet and elegant taste.

Extraction system: Preventive pitting and cold extraction in a continuous cycle within 12 hours of harvesting, natural decantation and decanting

Filtering: Using natural sheets 

Appearance: Green with golden yellow reflections 

Aroma: Net of olives with delicate herbaceous tones, artichoke and spices

Taste: Medium strong fruity, with herbaceous and spicy notes 

Use: Excellent in finishing large plates. To be used as a cream, almost a vegetable "stock" to enhance all dishes with a strong taste, typical of haute cuisine
